Salmon or Swordfish with Basil Caper Butter

This sound difficult, but it is a quick fix once you get going. Enjoy the butter on any fish you grill or bake. I like Salmon or Swordfish.
Ingredients:
6 T unsalted butter
2 T chopped fresh basil
2 t drained capers, chopped
1 T plus 1 t fresh lemon juice
Salt and freshly ground pepper to taste
1 T extra virgin olive oil
4-6 fish steaks cit 1 inch thick
Directions:
Light a grill or preheat oven to 450 degrees (include a cast iron skillet in oven). Blend butter, basil, capers and 1 Teaspoon lemon juice season with salt and pepper as you like and refrigerate.
Blend olive oil and 1 T lemon juice. Season fish with salt and pepper, if desired, and then roll fish in olive oil lemon mixture. Place fish on grill approximately 4 minutes each side. OR place fish in hot cast iron skillet for 10-11 minutes without turning or opening the oven. Top with a spoonful of flavored butter.
Serve with any type rice and fresh veggies or salad of choice. Wine pairing – Sauvignon Blanc
