I keep these ingedients in the pantry for a last minute dinner. "It's 5:45pm and I haven't made dinner yet!!"
Ingredients:
1 lb diced chicken breast or
1lb cooked frozen shrimp
1 small bag mini carrots
2 6 oz packages Chow Mein Noodles (Wel Pac or local brand -also called Cantonese Noodles)
1 bottle House of Tsang Classic Stir Fry Sauce
1 14 oz can Bean Sprouts (La Choy)
1 can waterchestnuts, drained (La Choy)
1 can crunchy chow mein noodles (La Choy)
Put a large pot of water on to boil.
Dice and cook chicken in a large skillet in 1 Tablespoon oil over medium heat. Add carrots 2-3 minutes before the chicken is browned. Reduce heat to low.
Add waterchestnuts, bean sprouts and sauce.
When water boils add Packaged Noodles - cook 3 minutes only!!! and drain well.
Add cooked noodles to chicken mixture and stir until coated with sauce. Serve with crunchy chow mein noodles.
You can substitute cooked shrimp for the chicken and boil the carrots with the noodles if you are in a real hurry!
I have 8 in my family - you can cut this in half for 4 people.

Thanks, Amanda! I'm always looking for new quick dinners to try! (And I'm fairly clueless about how to cook Asian foods, but this one definitely sounds easy - and especially good with the broccoli!)
